    Today we interview the Exec Producer and Writer on Severance Season 1, Chris Black, a man who has been writing TV since the mid-90's! Weird Science, Sliders, Cleopatra 2525, Star Trek: Enterprise, Desperate Housewives, Mad Men, Ugly Betty, Lone Star, Outcast, Invincible, Severance (which is why he's here today), and most recently, Monarch: Legacy of Monsters.

    Chris oversaw the Severance Season 1 writer's room and is the credited writer on Episode 8 (though as you'll learn in today's interview, which parts of which episode which writer actually wrote gets a bit complicated.)

    Brady Vineyard Paso Robles Cabernet Franc 2021
    A warmer weather Cab Franc compared to Dallas' picks. Dave says you need the greater intensity for these intense final episodes - more extraction, more "sweetness" (not literal sugar sweetness, but jamminess), yet still with Franc's acidic and green pepper bite. The wine featured in the show is from the Lorimar Winery but that Cab Franc is not currently avaiable, so Brady Vineyard's also from Paso, is an excellent, available alternative!

    2021 Cantine Barbera Notrix Perricone Terre Siciliane (Sicily, Italy)
    Grape varieties: Perricone 90%, Catanese 10%
    A lively ruby color with violet shades that meet a playful nose of red berries and geranium flowers. Its solid tannins define a medium-bodied palate, where spicy notes of star anise and ginger stand out against a persistent saline background.

    DAVE'S WINE
    2019 Red Newt Cellars Cabernet Franc, Glacier Ridge Vineyard, Finger Lakes, New York
    Or any cool climate Cab Franc will likely do! Though this one from Glacier Ridge vineyards contains a smoky, earthy dimension that truly pairs with the noir-style of these episodes!

    DAVE'S WINE

    Pitys Ritinitis (aka Retsina) NV
    100% Assyrtiko from vineyards in Katarrachia and Mantineia, Greece. With, of course, pine resin added! That's what makes it a "retsina"! A daily drinker in Greece, the vegemite of Greece, it tastes like wine made from an alien to everyone else.

    Ancient Greeks used to seal off wine-filled amphorae with pine resin. The resin would then seep into the wine itself, and act as a preservative! They came to love the flavor, too, and so the practice continues to the present day. Note that most modern Greek wine does NOT do this, only those marked "Ritinitis" or "Retsina".

    DALLAS' WINE
    2022 Domaine des Sables Verts Saumur-Champigny "Glouglou"
    An mostly "natural" wine (minimal sulfites have been added, but the winemakers work as "naturally" as possible and are in the process of being certified organic). Crafted in the Loire valley, the Saumur-Champigny AOC in specific in a 16 hectare domanie, this is 100% Cabernet Franc and is meant to be drunk young. Fresh red fruit, high acidity, soft tannins, and subtle hints of florals and fresh earth.

    We also tangent quite a bit, and discuss spoiler culture and maybe we should take more personal responsibility for that, then speaking of responsibility, we discuss “consumer responsibility” when viewing streaming selections and/or attending the theater, plus pretension in both Hollywood and the wine industry.

    It's a bloody great talk! Though your mileage may vary. :P

    DAVE'S WINE
    2020 Marichal Reserve Collection Tannat, Canelones, Uruguay
    Tannat is one of the great age-worthy, intense red wines of the world that has found a home in Uruguay where it is the national grape! Aged for 12 months in 70% new oak barrels, this is still a young wine with rough edges to spare, but as I say in the podcast - "drink 'em young!" The intensity and "angularity" (sharp edges) are why it pairs so well with Romulus! Plus filmmakers Fede Alvarez and Rodo Sayagues are both of Uruguayan descent.

    DALLAS' WINE
    Kleine Draken Pinotage Paarl 2022
    Located on the Western Cape of South Africa. Fermented on skins 12 to 18 days after which the skins are pressed and inoculated with malolactic bacteria to initiate a 2nd fermentation. Then the wine is filtered and stabilized prior to bottling.

    Bright ruby red in color (which suggests good acidity!) Medium-bodied with well-balanced tannins and the telltale Pinotage burnt rubber/leather note. An intense red for an intense movie!

    BRYANT'S NOT-WINE
    Lo-Carb Monster Energy Drink
    According to the Monster website:
